gather 3 shallow bowls; place flour, salt and pepper in one bowl. Add beaten eggs to second bowl. Mix panko and shredded coconut in the third bowl.
coat one shrimp at a time in flour, then egg, then panko and press gently so coating sticks to shrimp
set shrimp aside as you coat remaining shrimp
add vegetable oil to a deep frying pan to coat bottom of pan ~1/2 inch and heat
place shrimp in pan, trying not to overcrowd the pan
cook 2 minutes then flip and cook another 2 minutes
place on plate lined with paper towel to absorb oil
